I use Carpet tape - the type designed to hold the edges of rugs in place. It's very sticky stuff and not too expensive. However if you don't mind two pin holes in the workpiece it's actually easier just to use two panel pins.
 
Any recommendations for decent tape to stick templates down please?
Thing is "it depends " how much work you are doing that might disturb the templates, versus how difficult it is to remove templates and glue afterwords.
Just think, some DS tapes are so good that after cramping they are almost as fixed as if it was a piece of wood glued to it.

All the double-sides tape I have used works fine, but I find is a pain to remove from whichever side it sticks to ultimately.

I have tried thicker type tape which is white, and transparent, thinner, tape that I got from Axminster.

I now find it much easier/quicker to use two opposing pieces of masking tape stuck together with superglue with activator.
