Excuse my ignorance but what's a soap finish?
It's exactly what it sounds like to be honest. It's a finish made using Castile type soap and water. Couple of different versions depending on use case. Creates a very soft surface.

It's cheap and doesn't upset the look of the wood so I quite like it so far, but only tried it on a couple or projects.
 
If you like soft surfaces it is worth a look. I suspect part of it is being slightly alkali, softening the surface fibres.
