Walnut?
 
Not very easy to tell from the blurred photo, but looks like plum to me. Does the wood have any finish on or is it bare?

sorry for the bad quality my normal camera is broken so this is off my phone, it is with a small amount of vegetable oil on. The white coloured part has a very thin grain similar in shape to oak but less pronounced.

My guess would be ash, which is some times called 'poor man's oak'. The olive brown heartwood and white sap wood is common on older trees.

yarp - i'm with you on that

olive ash - the grain is too course and thev sap wood too pale for walnut
