Oil both sides of worktop ?

Sounds like a silly question, but do I need to oil both sides of a beech workbench top or just the visible face ?

2-3cts on the underside and flood any cut edges for sinks, hobs etc.

To seal it. If only one side is oiled, then it could bow or twist.

Exactly, helps control the effects of temp and humidity by having a constant barrier all round the piece
