I am currently spraying Annie Sloan Chalk Paint with an Earlex HV5500 and a 2mm nozzle, how much do you clean when you need a lunch break etc. Do you have some tips?

Have done four small tables and achieved a good result. Currently doing two small Mahogany old tables with a light colour the wood / dye has come through the first coat, I am about to give them a coat on Zinsser 1-2-3 which I think will fix this.

I am fairly new to spraying

Just remove the air cap and drop it in a cup of thinners and wipe off any over spray if any.

Thanks, would this also work over night if the needle was wiped cleaned ? I guess a second pot would be the answer so thinners could be blown through.

Depends on the paint really, you will need to give it a stir up and paint will start to gum up the passages in the gun after a while.
