I want to make some buttons for a cardigan I've just knitted. Beech most likely. What's a good surface finish for them to be washable? Don't need to be high gloss or anything, just reasonably durable.

Try Rustins plastic coating that's is supposed to be tough as long as not washed hot it should be durable enough that its not affected by detergent or water.
 
Whatever finish you use will get removed after a couple of rounds in a washing machine. Choose a decent hard wood and sand to as high a finish as you can and then leave bare. I sell them like that and have no complaints (yet LOL)
