I am about to fit a new door of old pine or possibly oak but we like the stripped look and this will go with other doors in the house. I am aware that stripped timber can move about and the house has central heating. So is there a finish that will seal the wood with minium change of color to maintain the stripped look and stop large timber movement .
 
Not certail Old, but I seem to remember good old beeswax being the finish of choice for this kind of application, with a minimal amount of darkening of the wood and a degree of sealing to minimise movement ?

Try water base matt varnish.
Try the back edge first to see if one or to coats show to much for you and then wire wool and wax to make sure its smouth :).
