Do both sides at the same time make absolutely certain that what you are pressing on is going to leave it totally flat and take care that you have the right amount of glue otherwise you will end up pressing it into a shape that will not be easy to sort out. wrap the ply in cling film or something to stop it sticking to your walnut
personally I prefer animal glue and a hammer but that `s another technique to learn. I have some walnut veneer if you are short of a small amount.
HTH as I dont really know what sort of sizes we`re dealing with here

Have you looked at using glue film? In my experience it is easy to use and works well with standard veneer, though its not so good with thick veneers.

As others have said you just won't get enough pressure with bricks.
