just a safety question
is it ok to put a round of ply between chuck and work
to reduce the depth of hole

Yes, just make sure it's a reasonable diameter to maintain support.

On my 8-9mm dia. screw chucks I regularly use an MDF disk to reduce the bore depth needed.

A lot depends upon the wood you are attaching and how secure the fixing is.

If in doubt bring the tailstock up to prevent the piece flying off.
 
Another trick I have used when turning a soft wood is to drop some hot glue onto the screw before inserting. Some woods like poplar and pine can strip the thread in the wood and spin off.
