do they have to be square headed?is it possible to use hex head bolts of the right length?

I have an old multico L3 thicknesser, i presume you are talking about the cutter block wedge? On mine they are standard Socket head allen screws. The adjusting screws that set the height of the blade are standard cheese head machine screws with a reduced shoulder turned on the head.

Don’t know if Inca can help. They appear to hold some Multico spares.
