Iv been given a number of bits like below, Just wondering what the next step is before turning?

Depends on what you'd like to get out of them.

bowls - cut yourself a round template from some thin ply or thick card pin it to the rounded side of the log, place the flat side on the bed of the bandsaw and cut to round following the template.

goblets/ candlesticks etc - just slice down the length of the logs to get 2x2 's or whatever size you want.
 
The piece on the right is cut in a different orientation to the others, ie the flat face is end grain. If its deep enough ( can't be sure from the pic), it could be cut into small sections which could then be mounted with the grain parallel to the lathe axis and turned into light pulls, and possibly boxes or egg cups if deep enough.

If you want to do a natural edge round bowl then you need to flatten the middle of the bark side so that you can fit a screw chuck or a small face plate and cut the corners of to get something like this

If you want to do a wayney edge bowl then just mount your screw chuck or face plate on the middle of the flat wood side and don't remove the corners do the foot first and the underside of the bowl turn it around and finish the top and you will get something like this I hope they are of some help to you
