The time of year will slow the drying time down. We have noticed the same about the coffee as well.

Current coffee packaging is woefully wasteful. Compressed to tablet form a "teaspoon" may be reduced to the size of an aspirin.

This could generate massive savings in transport, glass, shelf space etc.

Do swallow the coffee tablet with a glass of hot water and a glass of milk and jump up and down.......
