A finish for maple?

I am currently making a 'kitchen island' (butchers block type of thing). The surface is 2" x 2" bolted through and will not have a finish applied (for hygiene reasons).

The legs etc will have a finish. The suggestion I have had is to apply 3 caots of varnish. However, I am not a fan of varnish and would like some suggestions for an alternative finish. Any suggestions please
