If I am not finishing with oils, I use Chestnut Acrylic Sanding Sealer, then Chestnut Acrylic Lacquer.
This lacquer does not give a high gloss shine, but what I suppose you would call a very smooth dull shine, you can reduce the shine even further by finally giving a very light sand with very fine wet & dry or fine steel wool.
