I am no great carver, but for what it's worth. My sharpening aids include:-
for gouges
standard off-hand bench grinder, two grits
diamond encrusted rubber compound wheel
buffing mop with compounds
flat diamond stones
leather surfaced almost strop
various slips, both oil and diamond
for knives
all of the above and a small ceramic stone
I use any, or all, of the above as required and without jigs.
