Water resistant finish for knock boxes

Hello,

I recently made a knock box for my espresso machine and I used a metal insert, however I really don't like the insert so I'd like to make a new knock box completely out of wood.

Wondering what the best finish for this will be as it's going to come in contact with moisture and need to be washed regularly.

The two that come to mind are polyurethane or epoxy, but don't really have any experience with either.

If you're going to be regularly washing a wooden artefact then follow with your other wooden kitchen tools. Beech, unfinished. Quick wash and dry. Or a dark oily hardwood and re-oil regularly
