Not so much how to do it, more how well does it accept stains? Was goint to use quilted maple veneer but stain it darker (not sure how dark yet) so figured best thing to do would be make the rest of the table from solid maple and stain everything in a one-er...

Is that a bad idea?
 
I recently made a bunch of display bases from solid maple - stained them with Colron wood dye and then lacquered. Came out very nicely, even the end grain.

I've done a lot of work in hard maple and it takes stain nicely. Most of my staining was in 'antique colonial', which is a warm orange-brown colour (best I can describe). Great thing about maple imo is that the end grain doesn't go almost black compared to the rest. Yes, it's darker but not intensely so.
