Standard grinding angle is 25º then, hone at 30º. You should be able to hone the blades several times before you need to re-grind the primary bevel again. Always flatten the back of the blade first.
Traditional is 25 degrees primary and a touch more for the secondary honing bevel. As it's a smoother, you may wish to consider a very slightly curved edge so that you don't leave tram lines in your finished surface.
