Had a local guy do some work on my roof just before Christmas. Part of the work was re rendering the gable ends. Trouble is all the new render he put on has fallen off! Before I get him back I wondered if any builders could explain why this happened and what he would need to do to make sure it doesn't happen again.

Could be due to any number of reasons...
here's a few

inadequate preparation of the underlying area
friable underlying area (eg dusty or crumbly)
poor render mix
render put on too thinly
temperature too cold
.....
 
Or he forget his bottle of waterproof solution when mixing the render.
 
I would suggest that at that time of year the cold would have got to it while it was curing.

I guess that's good old fairy liquid. Some naughty people add this to make the mix more workable, but it doesn't work properly for the mix setting changing the set properties.

Get him to re do it on a warm day.
 
He should have added a frost protection solution in winter. But of course depending on what time of day he did it this might not have worked.
