How to add a secondary relief bevel, using Sorby Pro Edge?

Hi all, this may be a silly question on my part, but how would I add a secondary relief bevel to a gouge, specifically using the Robert Sorby pro edge?

For example I have a 55 degree bowl gouge with fingernail swept back grind, but want to add a relief bevel (I’m thinking of about 45 degrees)?

The further you stick the gouge out the front of the jig, the more pointed you'll make it.
So one way is to grind it with two different projections to make the clearance and the cutting bevels.
How much you grind off is down to eye ...

I've never felt inclined to do it, but the above should work.
