thanks for all the great info everyone, i just ordered a 800, 1200 and 6000 with a nagura stone along with a set of LN Bevel Edge chisels (fist gloat ever ) lol

The issue of dishing a waterstone is no different to dishing an oilstone - both will need flattening over time ... a waterstone dishes quicker and flattening a waterstone is easier, while dishing an oilstone takes longer and flattening longer.
