What is the best way to stop copper from discolouring is there a spray of some sort?

a lacquer would work. other finishes may too, but that is what springs immediately to mind.
 
Hi

If it's for indoor use and not subject to much handling, hairspray works well - it's also easily removed and re-applied when necessary
