I am looking at making a bread board top to a small unit. I intend to use two 4" wide boards side by side and then putting a narrow piece across both ends. Normally when making something of this nature I would glue at one point to allow for movement but being so narrow would I be OK gluing all the way across.There is also going to be two supports underneath again going across the grain
 
I wouldn't glue at all, I would use a drawbored mortice and tenon that way the wood can still move and the drawbore will keep the shoulder line tight. I have also done it with wedged tenons instead of drawbored and this works just as well. I suppose its all down to aesthetics really.

Thank you very much Matt the whole board is only going to be 8" across with a hidden tenon on the ends. I should have put this up before also it is not a cutting board but a piece to be added to an existing piece of furniture

Weather its a cutting board or not the principal is the same, the last time I used this method the piece was a foot wide.

I certainly wouldn't glue them all the way across. Draw boring would be my preferred method too- I can't think how else you could allow movement and keep it all together. Quarter sawn timber will help- you could glue one side and let it move in and out of the other- if there is a front and rear to the piece.
