I'd only ever use poly for outdoor stuff after trying it on both softwood, hardwood and man-made sheet goods. As John says, any good-quality PVA is far more suitable, but my favourite is Titebond original, an aliphatic resin glue which I find better when cleaning up any excess.

With MDF, treat the cut edges first, then the faces, then a quick second coat on the porous edges to make sure. :)

And give it several days to dry if possible if you are going to cut into the joint. I often glue up (pva) mdf slabs for cutting turning blanks out of and find the glue creeps out of the joint slightly leaving a ridge after a few more days unless it is well dry.
