I would definitely concur with the view that the ceiling height should allow an 8x4 sheet to be tilted diagonally.

It's all very well being able to slide a sheet along the floor on its end but how do you then get it onto the table saw if you can't tip it on its diagonal?

With great difficulty, that's how...

Don't forget room for dust system ducts too, as well as lights, electrics etc.

It should be possible to insulate with foam board like Kingspan let in between the rafters, and sheeted underneath.

After that it depends on what you plan to make, but that's probably one of the hardest predictions to make....
