wood choice for table

Hi My daughter wants me to make a dinning table, but wants it in a dark (Mahogany) coloured wood. Given she will probably change her mind in a couple of years there's no way I am making it in Mahogany, so was wondering if Poplar could be stained, either that or Maranti. Any ideas?

Ive never had any success with staining poplar, it always looks horrible.

Meranti maybe be ok, if a bit bland grain wise, although there isnt a great difference in price from meranti to sapele.
