In all the workshops I have had that have been 3 phase you have 4 wires coming in, 3 of them are normally marked red, blue and yellow, these are the phases, the 4th being neutral.

In the panel you have a bar which you connect the phases too.

If you are connecting a 3 phase machine you connect all three phases and an earth, a few machines also need a neutral as well.

Also there are 2 other strips of connectors, 1 for the earth and 1 for the neutral.

If you want a 240v circuit you use one phase, a neutral and an earth, as you would in a 240v panel.

Most sparks when they wire the panel up for 240v will take the lights of one phase, the sockets off another to help balance the loads.

This means when we get a blip here the lights may go off but the sockets may stay on.

So Bob yes you would get all the wires if you went 3 phase, but I suspect the cost would be high.
