not sure how I should cut them up

I think with the oak burr, (presuming its already a halved log which it looks like to me) i would maybe trim a bit off the endgrain to make it a little closer to square and make a bowl or platter with a rim that is square and waney edged. something like this

With the plum rip cut it (along the grain, like chopping with an axe) right down the middle, when looking at the picture either horizontally to get two thick narrow blanks or vertically to get two wide shallow blanks.

Just my thoughts!

Try to keep the burr in a state that will allow the retaining of a natural edge wherever possible to a finished piece, cut edges can look out of place in juxtaposition with natural edges.

If you are not after maximum size you may be able to get a small, maximum character slice off the nearest burr protrusion as seen in the image, leaving a larger slice of still figured wood to form a shallow dish or platter from the widest remainder.
 
I think I understand
the burr will be the inside of bowl left with a natural edge?
so I need to slice as thick as possible parallel to burr ?

it was a freebie so not too worried about the rest
may get some pens out of waste if worse case scenario

Yes, I was thinking somewhere along these lines.

Similar to what Donald posted.

Look good if you can keep the majority of the burr surface underneath.

Either small base or a two or three small legs (pegs) to even up the uneven surface to for a three point support,
 
not sure i am capable of doing anything with the burr
i will butcher the plum
and leave the oak until i understand more
