I want to build a large spice drawer around 900mm wide x 600mm deep with around 30 little sections for each spice/herb. I want to use a timber that will not effect the spices.

Will something just like beech/oak/maple be ok with a finishing oil treatment.

Andy,
I think most woods will be fine - I would use poplar for the internals. I would not however, use a finishing oil which smells quite strong. I suggest you leave the internals unfinished.
 
Herbs and spices should be kept in airtight containers anyway, so I would suggest finding a source of little jars, designing your compartments around them, and using whatever wood and finish you want. Otherwise, your thyme will taste of cumin, etc, and the whole lot will lose their essentials oils much faster.
