Suggestions for using vine truss wood

I have a couple of vine trusses that were 40 to 50 years old when they were cut (but I don't know how long ago that was).

I have been thinking about making kitchen utensils, but wonder if members have used this wood for anything else.
 
What species of timber is it? I'm guessing it could be sweet chestnut or maybe oak? Can you post a picture? Cheers, W2S

How thick are the stems and of course how long do you intend to let them dry.
I am at a loss what to do with some 3" thick Forsythia logs . I may try to plank and stick them for decorative inserts etc.
Also might turn some of it.
If one does not try one never knows
 
They are 700 long, 100 to 120 dia at base and 60 to 70 at the top.

I thought of making kitchen spatulas, butter knives etc. but I have no idea if this wood is suiatble.
I also thought of cross cutting discs and mounting on a back board for some form of decoration.

Regarding how long to let them dry, I think I will plank the thick end and disc the thin end on one of the trusses and see how they turn out.
