Most organ swell pedals use capacitive (like a radio tuner) or optical; swell pedals are used WAY more than
any pot is made for - the carbon tracks tend to wear out.

Keyboard playing is different from organ. These days keyboards are touch sensitive to volume if set up so.
But I have no electric knowledge so what do I know.
