I have some Oregon pine that I'm hoping to use for a set of salt and pepper mills, is this wood suitable for this project as it does have quite a strong pine smell to it and im wondering if this will taint the salt or pepper granuals

I dont think the wood smell will affect the taste of salt or pepper to the point of putting people off. That said pine is kind of on the soft side for salt and pepper grinders and to be honest is not a great turning wood. It can be done but would not be my pick for grinders.
Regards
John
