I have always preferred to use a wooden chopping board because it turned out the "experts" who said plastic chopping boards were more hygenic were wrong! So for me, putting plastic inlay in a wooden board is the worst of both worlds! Interesting inlays but I think I would look for something else to use it on other than chopping boards! ;)

Sorry Adam, I didn't mean to hijack your thread but my thoughts were in a different direction.

Well, folk tend to use them more as serving platters than chopping boards, as far as i know no one has died yet LOL
