If you want back panel and French cleats, just set the back panel in the thickness of your cleats material, then the cabinet will sit flush on the wall.

For your drop down flap consider a ‘piano’ hinge and making the flap about 75mm taller than the cabinet, with the additional 75mm below the hinge. This will provide support to the flap when it’s down.
