Incredible how he makes it seem easy, isn't it? What wood is that? (I couldn't hear it mentioned in the video). I know the tools must be very sharp, but the wood seems to cut very well, with no splinters.
 
They use "populier". I don't know the English name, I don't think it is the same as poplar. It grows fast and in abundance overhere, very tall trees, loving wet soppy ground. The wood is used quite wet.

Edit: Yes, it is poplar, or cottonwood.
