My first suggestion - if you want something exactly like the one shown, would be to contact a local blacksmith who could knock you some up in pretty fast time.
I used to do blacksmithing as a hobby before the dreaded heart disease struck and I could have made something like these in about ten to 15 minutes.
 
Not a bad idea but I'd need to find out what diameter the shaft should be and I don't know what sort of tolerance would be acceptable.
 
19mm holes are compatible with round bench dogs and the veritas hold down clamps.

So just shy of 19mm would do the trick
 
As the Schwarz blog says, Phil Koontz is the source...though I think those may be made by his friend, Jake (at least if they are the "gold" gilded leaves).

Alternatively, "less" handsome ones can be bought via Tools for Working Wood.

Mine are even of the less handsome variety than the TFWW ones. As suggested, a local smith can knock them out pretty quick that work very well, as I did with mine.
