I'm no joiner, but I can tell you the the meaning of a few terms.

Jamb - (the b is silent - not sure why it's there)
The Vertical piece of wood, nailed or bolted to the brickwork, on which the door is hung.

Head - the horizontal piece of wood across the top, between the two jambs.

Some doors also have a frame in their structure. It usually consists of stiles and rails and braces, and this frame is then clad with T&G.

I bet there are better joiners on here who can give you more info.

Wizer , i think your doors would be better constructed if you had them 2" thick and the stiles 4" wide , ok you wont get as much insulation in there but you could up the quality of the insulation to cover this .
If i where to make them i would mortice and tenon the frame for the doors and rebate the inside edge to allow the cladding to be let in flush to the frame . I would also add diagonal braces from the bottom rail to the mid rail and from the mid rail to the head from the hinge side up to the rail/head to stop any racking .
