Frame ledge & brace gates

Hello folks I am planning on building some frame ledge & brace gates using 120 x 61mm for the stiles.
Am I right in thinking the mortices should be 20mm thick?

In short yes.

Anywhere around a third of the thickness of the wood for mortice width, i would go 3/4'' as that is the size of hollow chisel available for our morticer. In other words use what you have in that ball park.
