The only reason I can see to buy Waney edge is if it's the only way that particular timber is available or you want to include it in what you are making.
Otherwise the time and effort wasted in cleaning it up doesn't warrant the,usually,cheaper price.

This probably falls under Dom's "include" comment but FWIW:- in Sycamore nice rippled figure is often found near the waney edge, frequently in otherwise plain boards and if you only want a small amount then such a board won't attract premium prices from the supplier
