best finish on oak

I have made an oak 'work top' to go under a wash basin in a bathroom. I am concerned about it getting wet and going black. What would be the best finish to apply before fitting .

This oak is french and has a high tannin content if that makes a difference

HI, I know a couple of people in france, Roussines, who use vegetable oil on local oak kitchen worktops.

I have a ceramic sink surrounded by a French oak worktop - Danish oil works for me

I would second danish oil.
Rub some on, before it dries in about half an hour rub a second coat on, in another half an hour buff it up. Leave it a day, rub a third coat on, leave it half an hour, buff it up and then leave it a few days.

I did this with an oak table I made from a pew and a year on, gravy, spilt drinks, ketchup, still looks great.

Danish oil easy to apply and refresh, apply with a scotchbrite pad to make a grain filling slurry.
