An excellent demo well worth watching.
Good examples of tool control with excellent camera work that shows the edge cutting.

Hi I enjoyed the video thanks for sharing. I noticed he used a rubber chuck? very interesting, do you know where can I get one from?

I've had a quick internet search that was unsuccessful.
So suggest either contact Rudy Lopez http://www.rudolphlopez.com/gallery.html
Or make your own - I would use wood for the former/shape and stick flip-flop foam or similar where it touches the bowl. Rudy Lopez did mention that he used leather in the contact area in other pieces. I suspect that he doesn't use leather on the lighter shaded woods as in the vid to prevent marking the wood.

I'm sure others will be along with other ideas

He called it a rubber chucky. They were reviewed in the Woodturning magazine a while back http://www.rubberchucky.com/
No idea if you can get them over here.
I'd just make a dome of wood and put mouse mat/router mat over it when you use it. These days I use a vacuum chuck

That is what I would do cheaper and you make them to the size/shape you want
 
Router mat is dirt cheap in my local B&M store. I use it for many jobs, including lining the metal drawers in my tool chest.
The beauty of router mat for reverse chucking is you can stick it to the wooden form and just replace it if the need arises.

Thanks that's a good idea =D> I have some non slip matting I could try that :D
