I've shown my wife a few pictures of some of the scroll work on here. She likes it and is very artistically minded.
The only issue is the quality of work on here is so high it makes it look impossible.

So, is there any sites that would be aimed at a beginner? Some ideas for simple projects to get started with and ideally information on the basics of how to do certain tasks/cuts/methods/blade choice, that sort of thing.

I believe she would really enjoy it if I can show her ideas & information to give her some encouragement.

Its great that your wife is interested in scrolling, I suggest that she looks at Steve Good's site.http://stevedgo.ipower.com/cat/
As a beginner I would also suggest that she has a look at some videos on u tube, but beware some of the scrollers seem to be very fast. As for blade choice it is very hard to beat Flying Dutchman or Olsen blades. to get started no.5 and no 7 ultra reverse will do a treat. If you have to buy a scroll saw , beware of the really cheap ones, a second hand Hegner is way better than even the best of the cheap copies.
She will get plenty of help on this site as well and will learn alot

Beware of designs that impress by their intricacy and complexity. In the age of the laser cutter that's pointless.

In hand work, one-off creations, elegance of proportion and design should be the goal. If your wife has artistic talent, she should do well.

Your simple animal shapes look very good and easy; where can I find the patterns for similar ?

It was old book I think with country patterns or coloring book.
