Iam considering a new project, that includes using veneer for the first time.
My local auction house often has super cheap pieces of veneered furniture, broken good for firewood, but often with large areas of veneer, certainly big enough for me.
Now how would remove the veneer?
I'd buy an older piece, with thicker veneer, probably glued with pearl/hide glue.
Or should I not bother, and buy new?

Buy new, and practise on scrap before jumping into a project!

There's absolutely nothing wrong with re-using old veneer, but if you're new to veneering then you're just adding a big additional step to an already steep learning curve.
 
If it is glued with hide glue, an electric iron (not the household one unless you want to end a relationship) should be enough to soften the glue to enable it to be removed. Whether it's worth effort is another matter - not in my book unless the veneer is exceptional. Small quantities of veeneer can be had not much money.
