Made a twisted candle holder today made from some Oak
I put a Danish oil on and the wood and its all sticky now
Anyone know why ?

it's likely that the oil has sweated out from the pores of the oak, I have had similar problem with using pure tung oil, you just have to keep an eye on it and wipe it every 3-6 hours, it's much worse when you're in a cold workshop or garage and bring it inside into a warm environment, the trick is to wipe it away before it can start curing.

I made that mistake once with Danish oil on oak. Didn't wipe it off and got a horrible sticky mess.
 
White spirit on a rag and wipe it off as best you can. Apply a bit more oil, thinned down, but this time bring it into the house, and keep wiping it off.
