Large leaf Lime wood colour

Hi Everyone , A large Lime tree was trimmed recently and I collected several pieces , as I may try carving besides my normal woodturning. I’m a bit confuses about the colour of the wood , which should be white - yellow , however as you can see it’s more of a orange / light brown ?
Any ides ?

It's oxidisation, Lime does that after a while.
