Reviving this thread a bit for an update. Dumont et Fils was great, super helpful, they have a somewhat limited capacity for custom cuts on hardwoods (<70mm I think, pretty huge) but they have a very nice selection of birch and oak veneered plywoods which is perfect for our cabinetry project. I have also found a DeWalt supplier in Paris who, along with the Dumont & Fils guys, recommended I check out "Placage André" for other hardwoods, so I'll be checking them out soon-ish. Happy to be getting back into some woodworking now that we're settled into our new place.
