I'm about to start finishing a teak box with some ash inlay.

The teak needs a coat of stain just to even out the colour before oiling. However, I want to make sure the ash doesn't get discoloured so won't be fixing that until the teak has been stained/oiled.

Question is - how do I prevent the sanding of the ash (deliberately left a bit proud to allow for sanding) from stripping off all the finish on the teak? I can't put the ash in place then sand/remove/stain/refix because it's such a good fit removing it will almost certainly cause damage to the edges.

Is there a particular way of doing this sort of thing (never done it like this before) or do I just go for it?

When you fix the ash, you can seal the ash with some clear sealer after you have cleaned it up. Try scraping it then sanding it carefully.
You will have to use a small brush to just seal it ( if it at lest 2 coats ), you can then stain your teak without staining your ash.
Ps you can use mets to help get the dust off before you seal and stain
