Ive never built any but always assumed the stiles start out at about 10" wide boards. Seems very wasteful though. Either that or glue a lump on -not sure the glue line would last outside.

I suppose one way to do it would be to make a 9mm thick template and then a bearing guided router trim. Or bearing / ring fence on a spindle.
 
Laminate sections of timber together using biscuit joints to support the glued edge.
 
Using the section of timber where it naturally bends like that would be strongest I would think. For example, where a branch joins the trunk.
 
Draw the shape you require on a piece of 12 mm ( minimum thickness ) MDF / plywood . Marking on this the mortice lines and any other points that are use . Cut out the shape then clean up the cut edges making sure the curves are smooth and sweeping .
Then lay the template on the timber .
Mark around the shape .
Cut out and clean up .
Then transfer the mortice lines down
Make sure the template can't move .

Nice looking project !

.......... for a one-off set, but no doubt commercially an economical way of cutting many from wide/long boards could be worked out.

Lay them both out on the one board so that the bent crooks are at opposite ends and go under the bottom of each other
 
So were either for gluing or using one bit cut from a wide board. It's either going to be green oak if customer wants to pay. Will that not split off when the stuff drys if it's one bit?

Dunno about glue on green oak either. They might not go for it anyway so it might be in red pine which would cause no such problems.
 
If you make a full size template you can use that to determine how economical they are to cut out of a board .
Draw round one , then flip the template over and tuck one style inside the other .
Cut with a bandsaw or a jig saw .
