I was idly Googling to see what information I could find on using brass and stainless screws in Western Red Cedar when I came across this article on the Corrosion of Metals by Wood on the NPL website of all places, also an interesting article on the V&A website.
It's all a bit over the top for my purposes but it might be worth reading for anybody making medal/coin/curio display cases, cutlery canteens and the like. The advice on the Latham's Timber site was more appropriate to my more mundane requirements.
