Just cut some wooden wedges to slot in between the wheel and the bracket. You only need them for 2 of the wheels. Alternatively, you can sit the workbench on blocks when it's in place. Our just buy some locking ones :)

even casters with brakes will still rock if you are hand sawing on the cabinet, due to the inherent slack on the pivots.
Make a tilt action trolley that allows you to lower the trolley onto solid legs for use, then pull the lever to list the wheels into place for moving, like the kind that fit under kitchen stoves.

I would make two thick wedges that raise two of the wheels off the ground for safety. I made a movable stand for my bandsaw with two locking castors but it was still apt to move cutting thick material  hence using wedges which meant it went nowhere.

Actually, has anyone tried these? I've seen them recommended, but that's not the same as hearing from people who've actually tried them.

I've used castors and lockable castors for years and to be honest, I would have absolutely everything on castors. It makes for a far more versatile workshop - especially if you're pushed for space.

If you buy really good quality lockable castors (that lock all movement), then you won't get movement. I have tools mounted on units with four lockable castors and they are solid and movement free (remember the good quality bit).

Really good quality castors are not cheap, so if you are not pushing and pulling the thing from all angles, then try combining them with two non-lockable swivel castors at the back. Or cheaper still, try fixed castors at the back.

I mostly have to take stuff out on the driveway, so ...

Table saw - castors
Bandsaw - castors
Router table - castors
2x wood storage boxes - castors

I'm fairly certain the only thing not on castors is my scroll saw.

Oops, I forgot ...

Belt/disc sander on home-made stand - castors. :-D
